Yes simply save your style edits to create a document template with the
footnote style modified as needed. Then use that template to create your new
document(s), the changed styles in the template will be applied to new
footnotes.
No reason otherwise to adjust the defaults and you can prepopulate the document
with the exact styles you need by using a template workflow.
Otherwise no reason to change defaults.
