An example how you can work with styles regarding language:

1. Open Sidebar, Styles
2. Right-click the Default style, Modify
3. Click the Font tab
4. In the first section (Western), click the language dropdown and pick what
you want

Apply how you want per style (or create new styles and apply to them)
