That is the StarMath syntax you have to work with.

MathML <mfenced> stanzas for mixed 'open=', 'close=' bracket assignments are
always prefixed in StarMath with 'left' and 'right'. Bracket pairs in
LibreOffice are autoclosed by default.

You can escape the "]" by entering "\]"; and you can disable the auto closing
of bracket pairs from in the Math module's Tools -> Options -> LibreOffice Math
-> Settings panel.
