I did a Bibisect based on the repo bibisect-mac64-6.1.
Here are the results:

With great help from Mike Kaganski in a ask.libreoffice.org thread
(https://ask.libreoffice.org/en/question/213756/libreoffice-62-crashes-crashes-on-mac-os-catalina-after-a-while/)
we found the commit that introduced this issue. It has the commit message
"Upgrade update check and extension URLs to https" which most likely broke
things.
