Ah, thanks. For anyone else looking, the icon theme can be changed in Options
-> LibreOffice -> View -> Icon Style

I'd only tried changing the theme, didn't know this was available. Maybe
changing to a dark icon theme could be done automatically in the future? I
notice it doesn't have this issue on other desktops like XFCE.
