Confirmed on Debian 10, LibreOffice Version: 6.1.5.2
Build-ID: 1:6.1.5-3+deb10


NFSv3: 
Disabling File-Lock in the wrapper-script /usr/lib/libreoffice/program/soffice
resolves the issue but (evidently) does not tackle the problem. 

NFSv4.2: 
problem does not occur
NFS4 export options: rw,crossmnt,no_subtree_check,sync
