I discovered a workaround for this on Windows, run (one line only):

MsiExec.exe /Package
"path_where_LibreOffice_MSI_package_is\LibreOffice_%Version%_Win_%Platform%.msi"
REMOVE=gm_r_Fonts_OOo_Hidden

Substituting %Platform% with x86 or x64 and %Version%... with version.

If by any chance the OpenSymbol font will not be installed at
"%Folder_Where_LibreOffice_Is_installed\program\resource\common\fonts" because
of this command (I have not tested it with LibreOffice 7 yet, I do that with
LibreOffice 6.x), it is easy to get it from the LibreOffice MSI package using
7-zip:  Just find the "opens___.ttf" file, extract and install it manually.
