What you have configured to save automatically each 1 minute was "AutoRecovery
Information" [1]. It is documented to "save the information needed to restore
all open documents in case of a crash". It is stored in LibreOffice's Backups
directory [2], and it is expected that this information is only used during the
editing session; if this session is suddenly interrupted by a crash/power
outage, then the next time you launch LibreOffice, it is used to restore the
information.
But when you close the document normally, this information is removed in any
case: both when you save the document, or when you reject the save prompt. The
latter case simply means that user has changed their mind, and does not want to
keep the changes.

Try resetting your user profile (use Safe Mode for that, available from Help
menu) [3].
