There's nothing wrong with that. The document contains a default paragraph
style with

      <style:text-properties style:use-window-font-color="true"
style:font-name="Delius" fo:font-size="15pt" fo:language="es" fo:country="none"
style:letter-kerning="false" style:font-name-asian="Delius1"
style:font-size-asian="15pt" style:language-asian="zh" style:country-asian="CN"
style:font-name-complex="Delius1" style:font-size-complex="15pt"
style:language-complex="hi" style:country-complex="IN" fo:hyphenate="false"
fo:hyphenation-remain-char-count="2" fo:hyphenation-push-char-count="2"/>

note  fo:language="es" fo:country="none"   so {es} occurring in the language
list is *expected*. The style is listed in the Stylist as "Default Paragraph
Style" but apparently not applied, see its properties the Language {es} is
assigned.

However/whoever/whatever ((template) extension?) created that style, the
generator of the document is an ancient
