For OP please retest with current LO 7.2.0 rc or nightly dev trunk against
7.3.0 where for bug 141986 LO now provides an application color dark mode,
about 80% of the UI--unfortunately the composition of the notebook bar widgets
are not adjusted, just one of the issues with the NB framework (bug 107237).
And, nothing has been done yet for bug 118320 to actually support Windows UWP
color themeing--so static UI.xcu theme for dark mode needs further refinement.
Work a bit with the new 'LibreOffice Dark' application color theme.
Tools -> Options -> Application Colors -> Color Scheme
and some mix of Icon theme selection, and then possibly with a Personalization
theme (though those are being reworked, bug 125823).
