I reproduced it in the following environment.
In the tab menu, many were fine, but some items remained dark in text.

Debian sid
Version: 7.1.3.2 / LibreOffice Community
Build ID: 47f78053abe362b9384784d31a6e56f8511eb1c1
CPU threads: 8; OS: Linux 5.10; UI render: default; VCL: gtk3
Locale: ja-JP (ja_JP.UTF-8); UI: ja-JP
Calc: threaded

I was able to change the GTK theme in the following ways 
1. Launch GNOME Tweaks
2. Select Appearance tab
3. Select "Adwaita-dark" in Theme-Application
