So I tried running SAL_USE_VCLPLUGIN=gen libreoffice and then opening the file.
That produced the error I just attached which appears to be pointing at a
previous version of libreoffice.

I've checked and I don't have a version installed from apt but
/usr/bin/libreoffice is running version LibreOffice 7.1.6.2 10(Build:2)

I can see its installed in the software centre so I'm going to look to clean
out every installation I can find including the snap package and then try
installing it again as I'm guessing it's got conflicts somewhere by having
multiple versions installed
