They are already stored in the file in the config-items 'GridCoarseWidth', 'GridCoarseHeight', 'GridFineWidth', and 'GridFineHeight'. An existing document is initially shown with the grid, that is stored in its config-items. But when you turn grid off and then on again, the settings from Tools > Options are used. I support to handle the grid per document. It makes sense to have it per document, because the needed grid depends highly on the size of the document.
