The only way to get really useful debug information generally is by using a
debug-enabled macOS build of LO. As these are not provided (at least I don't
think they are) in the daily builds, the only other way is to build yourself
from source code with the debug enabled switch.
Other than that, you might be able to find at least some kind of information
via the Console.app, and searching through the log files. If LibreOffice
crashes, there is usually some kind of log left behind in the system, which
might contain information of use.</pre>
