Now that's very interesting. I did not notice that double clicking the status
bar in certain areas will open related dialogues. Why not change that behavior
to single-click?

The GNOME HIG does have some things to say about this:
https://developer.gnome.org/hig-book/stable/controls-status-bars.html.en
It seems opening things on double click is (was?) a standard method for opening
things from the status bar, provided the section to be clicked was inlaid such
that it was discoverable. Recently, however, they've changed how status bars
work in gedit to open a popover on a single click, which may be reflected in
the new HIG if/whenever it comes out.

In any case, the status bar's current behavior of doing some things on a right
click, others on a single click, and others on a double click is inconsistent
with itself and human interface guidelines and deserves a rework.
