This is built in AutoCorrection edit shell detection of the format notation.
The format will not be applied until the paragraph is closed with an <Enter>
placing the formatting into bullet mode.

The function is controlled from Tools -> AutoCorrect -> AutoCorrect Options
dialog: Options tab entry in the Typing checkbox column "Bulleted and numbered
lists. Bullet symbol" [1]. With default profiles setting is now off, because
the preferred work flow is to apply style to entered paragraphs after entry.

With it enabled the numbering/bullets will apply while typing. Specifics for
numbering vs. bullets as in the help. But the bullet/font can be changed from
the dialog.

It works with considerable flexibility as intended => WF
