I don't get it. Add the header, use Insert > Field > More fields >
Docinformation > Subject, for example, to have File > Properties > Description
> Subject in the header. 

If you have more predefined option for the advanced menu in mind (the blue
dropdown), please specify what exactly is needed and why.
