The primary workflow is to pick one of the presets. Starting at the fine-tuning
options makes it cumbersome to reach "Formats Only", for example, via keyboard.
And you can use the hotkeys (alt+A..Z) anyway.

Not in the current implementation. But the idea of presets is to make things
configurable. And I could imagine to store the configuration at the button. UI
wise it might be a context menu on the button with "Save configuration" and
"Rename". You would check Numbers and Formulae, right click Values & Formats
and save the configuration on this button. Kinda hidden feature though.

If you like the idea please file an enhancement request.
