We discussed the topic in the design meeting. The bibliography entry is a
reference to the variable like other fields, and none can be deleted from the
insert/edit dialog. If you delete the field from the document it will also be
removed as source (unless the workflow involves a database, see
https://help.libreoffice.org/latest/en-US/text/swriter/guide/indices_literature.html).

Some issue crashes the application when changing the short name entry in the
define bibliography dialog. Reported at bug 164179.
