Yes, to video and audio. But I wonder if this includes animated gif. My take:
no.

With the option disabled, I'd still keep the placeholder image (therefore the
comparison with "images and other graphic objects" is not ideal).

The PDF export dialog has become a bit bulky. I suggest to move the watermark
option into the security tab, move the General frame at the left-bottom area
and have then enough space for further options at the Structure frame.
