The fields are FORMTEXT fields. 
Stored in ODF as 
<field:fieldmark-start text:name="Bookmark Copy 118" 
        field:type="vnd.oasis.opendocument.field.FORMTEXT"/>
<field:fieldmark-separator/>
<text:span text:style-name="T14">     </text:span>
<field:fieldmark-end/>

They are used in forms where the text outside of the fields is protected.
Therefore these fields cannot be removed but only the content can be changed.

In Word they are by default filled with 4 En Space characters.
In the default state Word selects the content on a click into the field. 

If the content is non default then the content is not selected on a single
click.
