We discussed the topic in the design meeting.

The use case is clear and reasonable: if the document contains a lot of date
fields it becomes annoying to always change the format.

While the scope of this request is still unclear (German has four different
locales, in total we provide 287, the potential solution might be an user
option to pick the default. Ideally realized as some kind of "favorite flag" in
the Edit Fields dialog.
