As I told you, I still didn't find time to test myself, and I'm utterly 
uneducated wrt benchmarking stuff. However, I think I would just try to 
use 'time' while playing some chosen video samples. I mean something 
like this :

with the -02 optimized Xorg :

time xine -pq -f /path/to/some/mpeg1_file
time xine -pq -f /path/to/some/mpeg2_file
time xine -pq -f /path/to/some/mpeg4_file
...

Run that multiple time and take some notes. Repeat with the -Os 
optimized Xorg. This should give a rough estimation of the overall 
performances.

There are probably far better way to do that though. I'm open to any 
suggestion.

Oh, and I'll try to build some -Os xine-lib and ffmpes also, but this 
might be trickier, especially for ffmpeg. And I still need to find more 
time... :-(
