Just add a "fonts" directory at the same level as the cMap, cidToUnicode,
nameToUnicode and unicodeMap subdirectories. ie

${prefix}/share/poppler/cMap
${prefix}/share/poppler/cidToUnicode
${prefix}/share/poppler/fonts

etc
