This problem appears specific to "Remote Desktop Services" being installed. 
Everything renders properly on WinXP, Win7, and Win2k8... Until we install
Remote Desktop Services (required) on Win2k8.

Some tested fonts include:
Calibri - Works
Times New Roman - Doesn't work.
Helvetica - Doesn't work.
Courier - Works
Garamond - Works.
