Do have have an older (prior to a3cee0e7e9) version already installed that your
PKG_CONFIG_PATH is pointing to?

I've experienced a similar issue when introspection is enabled and there is an
(internal API incompatible) version of libpoppler already installed. The build
seems to be trying to link with the previously installed version instead of the
current build version. The work around is to remove the old version or
configure with --enable-introspection=no.
