[poppler] soname stability

Hi,

It seems that the soname gets bumped on every poppler release. This
results in distros having to rebuild all packages linking to
libpoppler.

Since new poppler versions rarely break backwards-compatibility, I'm
asking that the soname gets bumped only when it's needed and not on
every release. [1]
