Comment (by coling):

 pavucontrol allows you to change the default sink and it is the preferred
 tool to use when using pulseaudio. It is also used to move individual
 streams to new sinks (e.g. you do not need an all or nothing approach,
 some streams locally (e.g. desktop sound events) and some remote (e.g.
 music to your hi-fi).
