Thanks, this worked fine. I've also added "description-key =
analog-output-headphones" to the stereo path file, because this key
already exists in alsa-mixer.c. I suggest adding
"analog-output-headphones-mono" for the mono device (updated the
patch).

Yes, you are correct. Adding this profile makes it possible to select
and use the mono output separately. Adding this in addition to
auto-profiles works very well (if auto-profiles is turned off, the
result is confusing and doesn't work; I tried many combinations of my
own profiles, but gave up).
I tested the result with Discord. In Gnome sound settings, I selected
"Headphones - Steelseries Arctic 7" and the profile that was
automatically selected was "Analog mono output + Analog stereo output
+ Analog mono input". In Discord, I selected "Steelseries Arctis 7
Analog mono headset". Now while playing some music in stereo, I was
chatting in Discord. On the headset, I could adjust the stereo volume
and mono (chat) volume separately with the dedicated wheels.
