George, if you want to use Spice as a remote desktop protocol only for Linux, you may be interested by XSpice, the X server using Spice. This way, your desktop/server doesn't need to run over QEMU.

See http://cgit.freedesktop.org/xorg/driver/xf86-video-qxl/tree/README.xspice . You won't get all of the nice features however, mostly only display+inputs for now.

Afaik, there is no way to export your current desktop (linux or windows) with Spice. That would be neat to have.
