I'm not aware of any such documentation but essentially, for client itself, it shouldn't be too hard to nail down the bare minimum needed to successfully laung the client. Things get a little more complicated when you put e.g. oVirt integration into the mix but then you should be able to write a simple launcher using REST API.
AFAICT, at least Wyse and 10Zig do have thin clients that should support Spice.
