FWIW, this is with systemd v44, where we don't have a
systemd-fsck-root.service, but fsck-root.service.

IIRC, the sysv checkroot init script also does a remount /, so
symlinking it to remount-rootfs.service seemed like the better fit.

For more info, see also [1] where we mask resp. symlink the sysv
services with native implementations.
