the option is available in the gsettings:
gsettings range org.gnome.desktop.peripherals.touchpad click-method
enum
'default'
'none'
'areas'
'fingers'
So you can set it, even though there's no GUI for it (yet).

libinput provides either software buttons or clickfinger behaviour, so we need
to pick one of the two defaults. afaik the majority of touchpads atm have the
software button behaviour by default.
