And the palm detection has gone back to being non-existent, suggesting that I
have moved from synaptics to the *old* version of libinput.

Perhaps I need installed, as well as the compiled stuff from git, not
'xserver-xorg-dev' but 'xserver-xorg-dev-hwe-16.04'?
