It's available in the wayland stack but not Xorg. GNOME on Wayland + GTK apps
should support pinch-to-zoom. And if you run libinput debug-events on the
commandline you'll find that the pinch gestures should be detected - the
libinput-gestures tool hooks on top of it after all.
