I would say that the unix way of fixing the problem is to have a
directory with a link or shell-scripts for each of these tasks and a
environment variable to point at the directory.

... yes I use rox ;)

A in my opinion less clean solution would be to have pseudo-mimetypes
for this kind of things and integrate with the "MIME run actions"
specification that is in the making.
