You can download a PDF version of the OpenGL spec from SGI (iirc)

The X protocol specification is part of the X distribution; you can find a 
postscript version in CVS:

http://freedesktop.org/cgi-bin/viewcvs.cgi/xorg/xc/doc/hardcopy/XProtocol/proto.PS.gz

The same goes for Render, except that it's a pure ASCII spec (ala IETF 
RFCs):
