For the released versions, you can just use the tarballs unless you
have a really compelling reason to pull the source directly.

http://xorg.freedesktop.org/releases/X11R7.1/src/
http://xorg.freedesktop.org/releases/X11R7.0/src/

I included the links for both releases because you will only find
tarballs for the packages that changed between 7.0 and 7.1 and the 7.1
directories. This is documented somewhere, but I don't remember right
now.
