How does xdg-open choose the application for a given file?

Hi all,

where do I have to set the application xdg-open uses for opening a
specific file type?

The man page is not very helpful in this respect. It says it chooses the
apps the user favors, but e.g. acroread is far away from being my
prefered pdf viewer. It seems, the read-the-users-mind part is not ready
for production use. ;-)
