Yes, the latest xf86-video-intel should work on G35.
It should work out of box on most recent distributions.

I've recompiled and reinstalled the graphics stack multiple times,
both to normal /usr directories and to separate test directories, and
it's entirely possible I've got something in the wrong place. I think
I should start clean and try this again from scratch. Questions:
-I'm using the instructions, including git locations, at
http://xorg.freedesktop.org/wiki/Development/git
*except* that I'm using xf86-video-intel 2.2.99.903 instead
of xf86-video-intel they reference. Should that work and/or
is there a better approach?
-Those instructions set up the graphics stack in a separate
directory for testing, which is a good idea for me given that
I'm having trouble getting this to work. However, if I do get
this to work - how do I change the instructions to get the
stack to install in it's normal/correct location? (When I used
./autogen without --prefix it seemed to install in /usr/local
which I don't think is right ...)
-If I want to "start clean", what should I remove to make sure
I don't have the wrong libraries, binaries, files, etc left over that
would screw up my new install?
-Just to confirm - I have an Asus P5E-VM HDMI motherboard,
which has G35 chipset and X3500 GMA, running (otherwise)
stock Kubuntu 7.10. I'm assuming xf86-video-intel 2.2.99.903
*should work* with this - am I right?

It's weired since your Xorg.0.log shows the version of your
intel driver is 2.2.0, which indicates master branch instead of
2.2.99.903.
