xvideosink is deprecated. It'll be removed for 0.8 and is only included
for regression testing. It was replaced by ximagesink (for pure X) and
xvimagesink (for pure Xv).

You can't. And you shouldn't, because it plugs transparently.

Should be possible, though not that easy.
