This is called "Jack Retasking".

Most likely you have some kind of low-level ALSA mixer control that
allows you to retask your jacks. Please check whether you can find one
with "alsamixer -c0".

If you find a control like this and it is apparently not set properly
when PA changes device profiles then this is probably something that
should be fixed in alsa.

i.e. when the "surround51:x" device string is opened ALSA should toggle the
retasking controls to enable 6ch mode, and when the device is closed
again or opened as "front:x" ALSA should toggle the retasking control
back to 2ch duplex mode.

This would then work similarly to how the SPDIF low-level controls are
toggled when "spdif:xxx" is opened/closed.
