Just use the disable-gtk flag:

./configure --disable-gtk

This is a bit off topic but if you want cutting edge libs you can
upgrade to fedora rawhide.  Core 3 will not get gtk 2.6.  Core 4 will
have it.  Or you can use the garnome build tree.
