I'd like to be able to write typographically correct angle brackets with DejaVu
fonts (instead of using "<" or ">")

AFAIK the correct characters for them are:
U+3008 LEFT ANGLE BRACKET
U+3009 RIGHT ANGLE BRACKET

They are in the CJK Symbols and Punctuation Block. I know that the coverage of
this Block is planned and probably has not yet started. But creating the two
angle brackets would not be too much work and they are signs, which would get
frequently used. (At least by people who know the difference between U+003C
LESS-THAN SIGN and U+3008 LEFT ANGLE BRACKET).
