Thanks for your reply, Sebastian. Indeed, after further tests, I figured out
the deadlocks were more common with files I extracted myself (with Banshee /
Sound Juicer).

But not only. Here, I uploaded a file (old MT32 video game music, I guess that
is pretty safe but I'll remove it afterwards) that triggers the issue (move the
position slider a couple of times in any of those gstreamer players) :
