Testing with the pipeline in comment 2, and the patch by Tristan Matthews, it
all works fine, but I get a 8 channel file. That's on a laptop where I'm not
even sure there's more than one microphone.

Considering that there's some uncertainty about channel ordering above 2, I'm
not sure generating those by default is such a good idea if the source does not
have so many actual channels in the first place. 2 would seem the best choice
for that pipeline, but is hardly a generic assumption.
