Hmmm.where are you making that change?  In GStreamer or in Rhythmbox?

The metadata default depends on the player.  The default for playback is
GStreamer.  If you choose GStreamer, then you get GStreamer metadata by
default too.  You may instead opt for monkey-media.  If you use the Xine
player, then you have to use monkey-media metadata.
