Probing for caps change

I've got a playbin working with gapless playback into an appsink->appsrc,
but I need to intercept the caps change events I'm seeing in debug output
(when playbin plays the next uri) to change the caps on my appsrc
accordingly. I'm looking at the documentation for pad probes, but I can't
quite work out what to use to intercept this specifically.
