How do I migrate to GStreamer 1.0.5?

Have you looked at:
https://fedoraproject.org/wiki/QA:Updates_Testing

It explains how to enable the testing repo and you should be able to yum
install from there. Since all packages are available then you should be
getting 1.0.5 version
