what propose is gst_object_sink and gst_object_ref_sink functions mainly ? I don't undertand what is mean as "float state"?

It's described in the GObject documentation here:
https://developer.gnome.org/gobject/stable/gobject-The-Base-Object-Type.html#floating-ref

The gst_object_*() functions related to reference counting are calling
the GObject API directly and only add some logging on top.
